I’m a work from home mom and my husband is a police officer, so to say our schedules are different is putting it mildly, which means that making sure we are all eating healthy is quite the task for me.
I consider myself a fairly old school wife. I’m not Donna Reed vacuuming in high heels waiting on him to walk through the door with a drink in hand, but I do like for us to eat dinner around the same time every night, and because I know he might not eat lunch when he’s on day shift I like to have dinner ready when he gets home just in case he’s starving.
This is a breakfast dish (even though I believe breakfast can be eaten any time of the day) that I whipped up on Sunday night so I could send it with him in the morning and even if he didn’t have lunch I at least knew that he had actually had breakfast with his coffee instead of just coffee and I felt a little better about myself. Selfish, I know, but this wife thing is hard work!
