Crustless Quiche

I’m a work from home mom and my husband is a police officer, so to say our schedules are different is putting it mildly, which means that making sure we are all eating healthy is quite the task for me.

I consider myself a fairly old school wife. I’m not Donna Reed vacuuming in high heels waiting on him to walk through the door with a drink in hand, but I do like for us to eat dinner around the same time every night, and because I know he might not eat lunch when he’s on day shift I like to have dinner ready when he gets home just in case he’s starving.

This is a breakfast dish (even though I believe breakfast can be eaten any time of the day) that I whipped up on Sunday night so I could send it with him in the morning and even if he didn’t have lunch I at least knew that he had actually had breakfast with his coffee instead of just coffee and I felt a little better about myself. Selfish, I know, but this wife thing is hard work!

Crustless Quiche
Save Recipe

  • 7 eggs
  • 4 slices bacon
  • 6 slices deli turkey, chopped
  • ¼ sweet onion, chopped
  • ¼ C milk
  • 1 Tbsp minced garlic
  • 1 C fresh spinach
  • Garlic powder, salt, & pepper to taste
  • Cheese, optional (I used a 5-cheese Italian blend)

  • Preheat oven to 400 degrees. Fry your bacon until crisp, remove from pan (reserving rendered fat) and chop. To the rendered fat add onion, minced garlic, turkey, chopped bacon, and spinach. When spinach begins to wilt, remove pan from heat and allow to cool to room temperature. Meanwhile, combine milk with eggs and whip until thoroughly combined. Spray an 8” x 8” pan with nonstick cooking spray and pour in spinach mixture. Gently pour egg mixture on top and combine with fork. Top with cheese if desired and bake for 35 – 45 minutes, just until middle is completely set.
