12 Days of Foodie Flava – Cinnamon Roll Cake

I was working on décor and menu ideas for our annual Friends & Family Christmas Party and was researching the lyrics of the 12 Days of Christmas for some ideas, and I learned that the twelve day of Christmas actually starts on Christmas day and runs through January 5… which gives me the perfect excuse to create some new dishes :).

Traditionally – at least for the last 6 or 7 Christmases – the parents, grandparents, and siblings come to our house for Christmas breakfast. Being Charlestonians we usually have shrimp and gravy with grits or salmon croquettes and I usually make cinnamon rolls or some kind of cake for dessert (yes, we have dessert at breakfast) to go with coffee or if you don’t want grits and bacon and eggs – not sure why you wouldn’t want it, but ok.

Every year I want to do something or at least add something different to the breakfast menu, but with last minute shopping and gift wrapping and visiting family, I rarely have time. This year I decided to plan ahead and make time! Since my cinnamon roll cake starts with store-bought cinnamon rolls AND I started a day ahead, it made it easier and was an absolute hit!

  • 1 - 5ct. pkg. Grands Cinnabon cinnamon rolls
  • 2 eggs
  • 1/4 C heavy cream
  • 1 Tbsp. rum extract
  • 1/4 C ground pecan pieces (I took pecan pieces and put in my coffee grinder)
  • 1 Tbsp. brown sugar
  • 2 Tbsp. melted butter


  • Preheat oven to 375 degrees. Combine ground pecans and brown sugar together and set aside. Spray 8" x 8" pan with cooking spray. Cut each cinnamon roll into quarters and arrange in pan. In a mixing bowl, combine eggs, cream, and rum extract and pour over cinnamon roll quarters. Sprinkle top with pecan-sugar mixture. Bake for about 10 - 12 minutes then pour melted butter over top. Continue baking for an additional 15 - 20 minutes until browned and knife inserted comes out clean. Allow to cool 10 - 15 minutes then spread top with cinnamon roll frosting. Enjoy!
