12 Days of Foodie Flava – Pulled turkey sandwiches

When The Ladybug comes in the summer, I usually make pulled pork sandwiches. She fell in love with them and now they are a staple. And the fact that it usually makes 2 or 3 meals is a WIN in my book! The thing with pulled pork is that Scoot won’t eat it. I’m not sure why – he usually just says no, thank you – but he won’t eat it. I bought an applewood flavored turkey breast tenderloin one day and decided to make it the same way that I make the pork loin – just for something new to do, and EUREEKA! Scoot loved it! He doesn’t eat bread (not sure how he’s my child with this breadless lifestyle of his…), but a couple of spoonfuls of pulled turkey and some corn niblets on his plate and he finally had a stomach full of something other than cold hot dogs or chicken tenders which made us both happy campers!

Crockpot Pulled Turkey

Ingredients

  • 2 packaged, seasoned turkey breast tenderloins
  • 32oz. beef stock
  • 1 - 2 Cups barbecue sauce of your choice

Instructions

  • Place turkey and beef stock in the crockpot and let cook for 4 - 8 hours. Gently remove (it will start to fall apart) and place on cutting board. Use two forks to pull apart and shred and set aside. Drain stock from crockpot leaving about 1/2 cup juice in the bottom. Place the shredded meat back in the juice, add in the barbecue sauce and stir to combine. Leave in crockpot on warm and serve directly from the crockpot.
