Lazy Girl Guacamole

I love guacamole, but I hate making it! I guess I should say I hate the time it takes to make it only to have it turn brown on you in a day or two if you don’t cover the top in lime slices, but then it’s chock full of an excessive and overpowering lime flavor that I don’t want.

I found this Yucatan guacamole that is awesome in flavor and in the fact that it comes in an anti-browning container of some kind. #Winning

But then I went to La Hacienda for a business meeting and had their guacamole and holy avocado, it changed my life! It was so chunky and flavorful that I wanted to go home and make my own… but I’m lazy such a multitasker that that idea faded fairly quickly. The only thing was, I STILL wanted guacamole, I just wasn’t inclined to pay La Hacienda prices.

Fortunately, on a random trip to Publix I found that they had the Yucatan guacamole on sale (2/$5) and all I had to do to accomplish my goal was to add half of an avocado, some diced red onion, lime juice, and fresh cilantro (something about that cilantro!). Presto-change-o: La Hacienda-ish guacamole remake for about $5 with multiple servings!

Let me know how yours turns out!
