12 Days of (heart healthy) Christmas: Chicken Crusted Pizza

When I first came across this recipe on Facebook I was very intrigued. I’ve been looking at different ways to make pizza crust that are low-carb and would be enjoyed by all of my family, not just me. This particular method really piqued my interest because, it my quest for more protein to our diets, this could find itself in the rotation, as The Husband says.

Unfortunately, the munchkins were none too excited about it since the crust wasn’t very crispy. I prefer to fry using organic lard, and since I was out of it and had no desire to drive twenty-five minutes to Whole Foods to get some, I opted to bake the crust instead. Next time, though I think I’ll try my hand at frying the chicken in personal sized crusts as I don’t think my frying pan is large enough for a family sized crust.

The Husband and I both enjoyed it, and we are both anxious for the fried version… be sure to check back for it!

  • 1 lb. ground chicken
  • Onion powder
  • Garlic powder
  • Dried oregano
  • Black pepper
  • 1 egg
  • Italian breadcrumbs
  • Marinara sauce
  • Cheese and pizza toppings


  • Preheat the oven to 400 degrees.
  • Combine the chicken, spices, egg, and breadcrumbs. Once thoroughly combined, press out onto a greased cookie sheet (or aluminum foil greased with cooking spray) and form into a circle.
  • Bake for 15 - 20 minutes until almost done.
  • Remove and top with marinara sauce, cheese, and toppings and bake an additional 12 - 15 minutes until cheese has melted.
  • Allow to rest for 5 minutes before cutting.
